  7. Make ready to taste Salt and pepper
  8. Make ready 1 cup mozzarella

Whisk the eggs in a large bowl. Add the milk and cream and whisk until smooth. Transform the classic ham and cheese quiche with the more grown up flavours of chorizo and manchego. It makes a lovely summer lunch or supper served with salad.

Instructions to make Chorizo and mushroom Quiche:
  1. Place the crust in a round baking dish and dock it with a fork and prebake for 10 min to set
  2. In a sauté pan cook the chorizo,mushrooms and shallots.
  3. In separate bowl, whisk the eggs and cream and add the salt and pepper
  4. Remove the crust from the oven and add the chorizo mixture top with mozzarella and the egg mixture.
  5. Place in the oven and bake at 180F for 35 min. The center should come out clean.

Transform the classic ham and cheese quiche with the more grown up flavours of chorizo and manchego. It makes a lovely summer lunch or supper served with salad. These mini quiches are a great party snacks. Filled with spicy chorizo, potatoes, and cheese, they can be garnished with garlic mayonnaise and fresh chives. These mini quiches were adorable and delicious!
