The ingredients needed to make Potato Bread Stuffing:
  1. Make ready 16 oz loaf plain potato bread
  2. Get 4 cup no sodium chicken stock (I used homemade)
  3. Get 1 cup cooked small diced/shredded chicken &/or parts
  4. Take 2 tsp celery salt
  5. Take 3 tsp poultry seasoning
  6. Prepare 2 tbsp dried parsely
  7. Make ready 1/4 tsp pepper
  8. Take 1 salt to taste
  9. Take 1 1/2 large onions (small diced)
  10. Make ready 3 stick celery small diced
  11. Prepare 8 tbsp butter
Steps to make Potato Bread Stuffing:
  1. Preheat oven to 350°F
  2. Cube bread into bite sized pieces. Lay pieces out in a single layer on a parchment lined cookie/baking sheet.
  3. Bake cubes for 10-15 min. Toss cubes around and bake for an additional 10-15 min or until crunchy. Set aside.
  4. Increase oven temp to 375°F
  5. In a medium sauce pan, melt butter.
  6. Add onion and celery and cook until tender. About 5-10 min. Stirring frequently and watch well so butter doesnt burn.
  7. Once veggies are tender, add chicken, broth/stock and seasonings. Wisk well.
  8. Spray a 9x13 deep baking dish with nonstick spray.
  9. Place bread cubes in baking dish.
  10. Spoon stock mix over bread cubes making sure u distribute evenly getting a little broth on all top cubes of bread.
  11. Cover with foil and bake 15-20 minutes or until heated through.
  12. Serve and enjoy!
  13. Hints n tips! :)
  14. For a sage flavor add 1tsp. Sage.
  15. You can use vegetable stock insteak of chicken.
  16. If u want meatless replace chicken with fine shredded carrot and cook with the onion.
