Make ready 1 tsp coriander powder (dhaniya powder)
Prepare 1/2 tsp turmeric powder (Haldi powder)
Get 1/2 tsp whole spice powder (garam masala powder)

Take 1 tbsp biryani masala (homemade)

Prepare Handful mint (podina)
Get Handful coriander (hara dhaniya)
Make ready 2-3 slit green chilies (Green chilli)
Get 2 cup rice (boiled with whole spices and salt)
Make ready 2-3 tbsp lemon juice
Get 1/2 tsp Yellow food colour
Prepare 2-3 medium size potato (cooked with salt and some spices) optional
Get Pinch saffron in 2 tsp warm milk
Get 1 tbsp fried onion (barista)
Instructions to make Kofta Biryani:
PREPARE KOFTA (Meatballs): In chopper add chicken mince,onion,coriander leaves,green chilies,ginger garlic paste,cumin powder,salt,red chilli powder,whole spice powder,bread slice and chop until well combined.
Grease your hands with oil,take a mixture and make 12 to 15 meat balls/ kofta of equal size. In frying pan heat oil and fry meat balls till golden brown and set aside.
PREPARE BIRYANI: In pot / wok add ghee and let it melt,add black pepper corns,clove,cinnamon stick,green cardamom,black cardamom and cumin seeds,mix well.Add onion and fry until light brown. Add tomatoes and ginger garlic paste and mix well.
Add red chilli powder,coriander powder,turmeric powder,whole spice powder,mace powder,nutmeg powder,salt,green chilies and mix well.Add yogurt,mix well and cook on high flame until oil separates.
Now will assemble the biryani for dum. In a big pot add cooked and fried kofta,boiled basmati rise,mint leaves,coriander leaves, fried onion,green chilies,lemon juice,potato,saffron milk and colour,again go with another layer,cover, seal from wheat dough and cook for 15 to 20 minutes on low flame.
Kofta biryani is ready to serve.enjoy it with raita and salad.
