It's all the flavor of two fabulous desserts in one mouthful. In a large mixing bowl beat cream cheese until smooth. With a Shortbread Crust, a layer of Cheesecake and a Cinnamon Sugar Topping, These Mexican Cheesecake Bars are fab and I mean f-a-b-u-l-o-u-s Not a lot of desserts come out of this meat and potato kitchen here on the Ranch. Churro Bars are chewy and loaded with cinnamon sugar!

Instructions to make Churro Cheesecake Sandwich Bars:
  1. Preheat oven to 350° and lightly spray 9x13 clear glass baking dish with cooking spray.
  2. Carefully open one package of crecent rolls and spread out over bottom of dish, pinching seams to make one solid crust.
  3. Optional: bake 1st crust for 5 minutes
  4. Mix both packages of cream cheese, 3/4 cup of sugar and vanilla in a large bowl until mixture is nice and fluffy.
  5. Spread mixture over the (now cooled) crust, making sure to go all the way out to the edges.
  6. Add 2nd package of crescent rolls over the mixture, pinching seams to make one crust like in the 1st layer.
  7. Mix the remaining sugar, brown sugar and cinnamon in a bowl and spread evenly over crust.
  8. Pour melted butter over the whole top of the crust.
  9. Bake for about 25 minutes or until the crust is golden brown.
  10. Let cool and enjoy! These are best after cooled down completely and even cold from the fridge in my opinion :)
