My favorite had been steamed, but boiled artichokes were my go-to since I don't actually have a steamer. When the dietician told me I needed to add some more good oils and fats into my diet, to include extra virgin olive oil, I found this recipe and tried it.

The ingredients needed to make Baked Artichoke:
  1. Take 1 artichoke
  2. Take 6 garlic cloves minced
  3. Get 1/2 cup olive oil
  4. Get 1 Tbsp lemon juice
  5. Take 3 Tbsp chopped flat leaf parsley
  6. Prepare 3 Tbsp parmesan cheese
  7. Take to taste salt and pepper

Brush the artichokes with olive oil (or butter). Then place them cut-side-up in a baking dish, or on a baking sheet. Fill the artichoke cavities with garlic and herbs. We recommend packing these as full as possible for maximum flavor.

Steps to make Baked Artichoke:
  1. Preheat oven to 425°
  2. Cut top of of artichoke and trim the points off. Rub lemon over cut part of artichoke. Season with salt and pepper
  3. In a bowl add garlic, oil, lemon juice, parsley and cheese season with salt and pepper, stir
  4. Place artichoke in a piece of tin foil, and pour garlic mixture over artichoke. Wrap artichoke in the foil. Bake for 1 hour and 20 minutes. ENJOY!!

Fill the artichoke cavities with garlic and herbs. We recommend packing these as full as possible for maximum flavor. Cover the pan tightly with foil and bake until a knife inserted near the base of the artichoke goes in with little resistance. Oh yes, this roasted artichoke halves recipe includes garlic butter. Remove the garlic cloves and transfer to a small pinch bowl.
