Traditionally taquitos and flautas are deep fried until crispy. The accepted definition is that baked taquitos would be smaller with corn tortillas and baked flautas would use flour tortillas. The mexican Taquitos, also sometimes called Flautas. The term flautas implies that it is typically made with a wheat flour tortilla, while taquitos refers usually to the ones made with a real corn tortilla.

Steps to make Taquitos (Flautas):
  1. Boil the chicken breast with garlic, seasoned salt, 1/2 onion. Shred once it's done (let it cool off a bit)
  2. In a somewhat deep pan heat up the oil
  3. In a flat pan or a Comal heat up some tortillas and wrap them lightly in a towel to keep warm. (Do a few at a time)
  4. Grab one warm tortilla and lightly stuff with chicken. Roll it and pin it with a toothpick.( Do a few)
  5. Add the tortilla rolls to the hot oil turning once until lightly browned ( do not over do it or they will get hard)
  6. Set standing up in a bowl on a paper towel to absorb excess oil or at an angle on a plate.
  7. Slice the remaining onion into half rings
  8. Remove toothpick and serve. Topped with sour cream, onion, tomatoes, lettuce and salsa
