For making the eggplant curry, first start with heating a bit of oil or vegetable broth. Now it is time to give the coconut milk and yellow curry paste into the mix, and season with salt and pepper (also the optional smoked paprika and cumin).

  1. Heat 2 spoonful of oil
  2. Add onion to the heated oil and saute it
  3. Add a spoonful of ginger garlic paste
  4. Add diced potato and eggplant and let it get fried well
  5. Then add pinch of turmeric powder, coriander and chilly powder and salt to taste.
  6. After mixing the spices well with the vegetables, add tomato and let it cook.
  7. Add some crushed peanuts
  8. Add little boiled water and let the curry cook till the potatoes are well cooked.
  9. Garnish with coriander and serve
