Assemble all your ingredients i) fresh aromatics (onions, garlic, ginger) and spices ii) chicken and iii) potatoes if you're using them (the curry is just as great without the potatoes, so don't worry if you don't have them) Heat oil in a deep, wide skillet on medium to medium-high heat.

The ingredients needed to make Daddy’s Chicken Curry:
  1. Take Fresh
  2. Get 1 Whole medium size Chicken cut into medium sized pieces
  3. Make ready 1 big onion diced finely
  4. Get 2 Tomatoes made into a purée
  5. Take 2 Tablespoons Garlic and Ginger Paste
  6. Take 2 small branch of Mint Leaves
  7. Make ready 2 small branch of Coriander Leaves
  8. Make ready Fresh lemon juice from 1 Lemon
  9. Make ready Oils
  10. Take 3 Tablespoons vegetable oil
  11. Prepare 2 Tablespoons ghee
  12. Take Whole Spices
  13. Get 4 cloves
  14. Make ready 4 Star Anise
  15. Get 4 Cardamom pods
  16. Make ready 1 medium size cinnamon stick
  17. Get 3 Bay Leaves
  18. Prepare 1 Tablespoon Cumin Seeds
  19. Take 1/2 Tablespoon Funnel Seeds
  20. Get Powdered Spices
  21. Prepare 1 Tablespoon Keen’s Curry Powder
  22. Take 1 Tablespoon Chili Powder (or according to taste)
  23. Get 1 Tablespoon Paprika (or according to taste)
  24. Make ready 1 1/2 Tablespoon Coriander powder
  25. Make ready 1/2 Tablespoon Cumin powder
  26. Take Salt (according to taste)
  27. Take Optional
  28. Take 2 Tablespoons thickened cream

Return the chicken breast to the skillet along with any juices on the plate. Add carrots, onion, garlic powder and rice. Add salt and pepper to taste. Add curry powder and stir in chicken broth.

Instructions to make Daddy’s Chicken Curry:
  1. Remove skin from the medium size whole chicken and cut it into medium size pieces
  2. Apply the lemon juice to the cut chicken pieces and coat well, and wash off. This will remove the smell from the chicken
  3. Dry the chicken pieces with dry paper towel and marinate the chicken with the 1/2 of the powdered spices with some oil. Mix well.
  4. Rest Marinated chicken for 3-4 hours by placing the bowl in the fridge, if in a hurry then 30 mins is fine.
  5. Take a large heavy based pot and put it on the stove with low to medium heat
  6. Add oil and ghee and all whole spices and gently fry them for about 2-3 minutes along with one branch of coriander and one branch of mint
  7. Now add the diced onions and sauté them until they are light brown
  8. Add garlic and ginger paste and sauté until golden brown
  9. Add the marinated chicken pieces to pot and toss them in the pot so that the onion and whole spices get applied the chicken.
  10. Turn the heat down to low. Once the chicken is light brown, add the tomato purée and mix it in with the chicken
  11. Add in the other half of the spices and mix them in to the contents of the pot
  12. Put a lid on the put and simmer on low heat for around 20 mins
  13. Taste the curry for flavour and see if anything needs adjusting. If required add in more powdered ingredients according to taste.
  14. Put the lid back on the pot and Let the curry simmer for another 30 mins, stirring the curry every 10 mins
  15. Taste the curry and see the flavour, check if the chicken is nice and tender
  16. Optional, add 2 tablespoons of cream and cook the curry for another 5 mins
  17. Remove the pot from the stove
  18. Add the remaining mint and coriander to the curry
  19. Daddy’s Chicken Curry is ready to served 😊

Add salt and pepper to taste. Add curry powder and stir in chicken broth. Add chicken making sure it gets mostly covered by the chicken broth. Then we would sneak out in the backyard and Papa would get in the kitchen to make his world famous chicken curry. It took him at least two hours to make that chicken curry.
