Bottle gourd, known as lauki (ghiya) in Hindi and Dudhi in Gujarati, is generally not a popular vegetable in every household but it makes one of the best Indian curries - Lauki Kofta Curry in which deep-fried koftas (round shaped deep fried spicy dumplings) made of grated bottle gourd, gram flour, rice flour and ginger-garlic paste are cooked in spicy gravy of tomato and cashew nuts. lauki kofta recipe

The ingredients needed to make Lauki kofta curry:
  1. Prepare 1 long or round juicy bottle gaurd or lauki
  2. Make ready 1 cup gramflour
  3. Get 1/3 cup curd
  4. Get 2 big finely chopped onion
  5. Get 1 green chilli chopped
  6. Take 5 tomatoes finely chopped
  7. Prepare 1 tbsp coriander powder
  8. Make ready 1 tbap garam masala
  9. Get 1 tbsp salt
  10. Take Half tsp black pepper
  11. Prepare 1 tsp red chilli powder
  12. Make ready 1 tsp cumin seeds
  13. Get 2 tbsp finely chopped garlic and ginger
  14. Prepare Pinch hing or asafoetida
  15. Get 1 tsp turmeric

These koftas are simmered in creamy, flavorful onion-tomato-yogurt gravy. Lauki or bottle gourd is also known as Ghiya or doodhi or Dudhi or Opo squash. In this summer season, it is available in all Indian veggie market. The Lauki/Doodhi kofta's are big favourite in my family, and considering they are non-fried gives me the satisfaction that my family is eating healthy.

Instructions to make Lauki kofta curry:
  1. First peeloff bottlegaurd or lauki.rinse in water.add gramflour and curd.pinch of salt,red pepper and turmeric
  2. Mix well make a thick fritter mixture no need to add water.just keep thick so fritters could not broken in curry.
  3. For frying just make oil hot at medium flame for 5 minutes and add small balls type portions into oil.deep fry until golden.
  4. For curry roast garlic,cumin seeds,ginger,green chilli,onion all together.saute until golden at high flame.add spices and tomatoes.let it cook at medium flame until mixture looks like thick curry.add around 1 glass water and take a nice boil.add lauki fritters and don't over boil now.just mix and turn off.enjoy so yumm lauki kofta curry
