  12. Make ready 1/2 C vegetable stock; warm on stove
  13. Prepare 1/2 lemon; juiced
  14. Prepare 1/4 C feta cheese crumbles
  15. Take 1 large pinch kosher salt & black pepper
  16. Prepare as needed olive oil;
Instructions to make Veggie Saute w/ Spinach & Feta:
  1. Heat enough oil to cover the bottom a large, tall saute pan. Add zucchini, bell peppers, shallots, rosemary, and thyme with a pinch of salt and pepper.
  2. Saute for 2 minutes. Add tomato, corn, and garlic. Saute 1 more minute. Do not burn garlic.
  3. Add spinach and a touch more olive oil. Stir and saute 30 seconds.
  4. Add vegetable stock. Reduce until dry.
  5. Add parsley, oregano, and lemon juice. Stir. Adjust seasoning with salt and pepper.
