  17. Get 1/2 tsp dried oregano
  18. Get to taste salt and pepper
  19. Get Marinara Sauce
  20. Make ready 2 Tbs olive oil
  21. Prepare 1/2 chopped onions
  22. Make ready 2 cups Italian plum tomatoes chopped
  23. Get 3 Tbs Tomato paste
  24. Take 1 Tbs basil
  25. Take 1 tsp suagr
  26. Take 1/2 tsp salt
  27. Prepare fresh ground pepper
  28. Get White Sauce
  29. Get 6 Tbs butter
  30. Get 6 Tbs flour
  31. Make ready 1 cup milk
  32. Take 1 cup heavy cream
  33. Take 1 tsp salt
  34. Make ready 1/8 tsp white pepper
Steps to make Cannelloni:
  1. Crepes: In a blender combine all ingredients. Let sit for 10 minutes.
  2. In a well oiled 8 inch omelet pan, pour enough mixture to cover the pan. (A little less than 1/4 cup). Cook about 1 minute over medium heat on each side or until lightly brown. This should make about 12 crepes.
  3. Filling: Cook spinach according to directions on package. Squeeze all water out, set aside.
  4. Heat oil in frying pan, add onions and garlic. Cook over moderate heat, stirring frequently for 7 minutes. Stir in spinach and cook. Stirring constantly for 4 minutes. transfer mixture to a large bowl.
  5. In the same pan, brown the ground beef, breaking up all the lumps, drain any grease and transfer meat to spinach mixture. Add parmesan cheese, cream, eggs, oregano, and salt and pepper.
  6. Fill each crepe with 2 Tbs. of filling and roll the crepe. Place crepes in a baking dish side by side.
  7. Marinara: Heat oil, add in onion and cook for 7 minutes. Add in tomatoes, tomato paste, basil, sugar, salt pepper. Bring to a boil.
  8. Reduce heat to simmer and cover partially for 40 minutes. Stir occasionally. Pour sauce over filled crepes in baking dish.
  9. White Sauce: Melt butter in a saucepan - remove from heat and add flour. Pour in milk and cream all at once.
  10. Whisking until flour is partially dissolved, return to high heat and cook constantly until mixture comes to a boil. Simmer still stirring every 2-3 minutes. Remove from heat.
  11. Add salt and pepper. Pour mixture over rolled crepes. Top with slivers of butter and parmesan cheese.
  12. Bake for 20 minutes on 375. Broil for 30 seconds at the end of the cooking time.
