  7. Repeat step 5 until you are out of room in the pan, then take the left over cheese filling and sprinkle it on top of the tortillas.
  8. Cover the tortillas in the enchilada sauce from the can and the remaking from the bowl
  9. Cover the entire set of enchiladas with the rest of the cheese and place in the oven.
  10. Bake for about 15-20 minuets or until the cheese has completely melted on top of the enchiladas

Cheese: My favorite cheeses to use when making enchiladas is a Mexican blend which consists of sharp cheddar, Colby and Monterey Jack cheese. However, any cheese combination will work! These enchiladas are filled with Cheddar cheese, onion, olives and mushrooms. Use any cheese and vegetables you prefer, and use Creole-style seasoning to taste.
