How to make Sweet Raw Mango Pickle. METHOD: Wash, peel and cut the mangoes into half-inch pieces. Mix in the salt and turmeric and set aside for one hour in a stainless steel vessel. Squeeze out the water from the mango, add jaggery, and place the vessel on the fire.

Steps to make KAIRAS/ RAW MANGO SWEET PICKLE:
  1. Heat a pan. Add oil, when heated add mustard seeds. Let them crackle
  2. Add hing, turmeric powder and the chopped raw mango. Cover and cook for 2 minutes.
  3. Add 1/2 cup of water and let it cook further until mango is soft.
  4. Add jaggery, red chilly powder, roasted methi powder and salt to taste. Cook this for another 2-3 minutes. Make sure the jaggery is dissolved.
  5. This is a tangy, delicious side dish that enhances your meals.

Mix in the salt and turmeric and set aside for one hour in a stainless steel vessel. Squeeze out the water from the mango, add jaggery, and place the vessel on the fire.
