These breadcrumb, garlic, parsley, and pecorino romano-stuffed artichokes are perfecting for serving as an appetizer at a small dinner party. Using kitchen scissors, snip off tips of outer leaves; brush cut edges with lemon juice. There is no pre-steaming of the artichokes in this recipe. You just prep trim the leaves, slice off the top, scoop out and discard the choke, and then stuff the leaves with the breadcrumb mixture.

Instructions to make Stuffed Artichokes:
  1. Clean and cut of tips and steam of the artichoke so it can stand on its own.
  2. In a mixing bowl. Add in bread crumbs, romano cheese, garlic, parsley, basil, hot pepper flakes, and lemon juice. mix together.
  3. Expand the artichoke and stuff it with the stuffing mixture.
  4. In the bottom of the Instant pot add in chicken broth. Make sure the wire rack is in the pot as well so the artichokes have something to sit on.
  5. Place artichokes into instant pot and drizzle oil and butter on top.
  6. Cook on high for 20 minutes in the instant cook.

There is no pre-steaming of the artichokes in this recipe. You just prep trim the leaves, slice off the top, scoop out and discard the choke, and then stuff the leaves with the breadcrumb mixture. Put into a pot with water, lemon, garlic, cover and bake until you can easily pull the leaves off. Fill a pot large enough to fit the artichokes with water. Rub the trimmed artichokes with lemon halves then squeeze lemons into the water.
