Spring Rolls are the vegetarian super light, crispy and tender vegetarian appetizer cousin of the traditional egg roll. Make ahead and freeze before frying! Spring rolls are my absolute favorite Vietnamese food. Apparently, people have different versions of the dipping sauce.

Steps to make Spring rolls:
  1. In a bowl add flour and corn flour together,add salt and add water,then make a smooth watery paste
  2. Place a non stick pan on low heat and smear using a brush for few minutes,the sheet will come out by it self
  3. For the filling,grate your veggies
  4. In a pan,add little oil and add the onions, scotch bonnet and stir,add the other veggies, seasoning and curry,stir and let simmer for some minutes,keep aside to cool down completely
  5. Spread the sheet and add the filling
  6. For the glue paste,add flour and water in a bowl to make a smooth glue
  7. Roll till you nearly reach the edge
  8. Then fold the sides and use the glue to hold the edge
  9. Fry in hot oil until golden brown and drain excess oil
  10. The corn flour adds crispiness to your spring rolls

Spring rolls are my absolute favorite Vietnamese food. Apparently, people have different versions of the dipping sauce. In our family (and yes, we're Vietnamese), we make a peanut-hoisin dipping sauce. Spring rolls are a delicious side dish to any Asian-influenced meal or can be a great snack on their own.
