The oyster omelette, as known as o-a-tsian (Chinese: 蚵仔煎; Pe̍h-ōe-jī: ô-á-chian), o-chien (Chinese: 蚵煎; Pe̍h-ōe-jī: ô-chian) or orh luak simplified Chinese: 蚝烙; traditional Chinese: 蠔烙. I love orh jian a lot. This hawker fried oyster omelette is one of the versions I've tried at Singapore hawker center. It is made with a thin layer of batter.

  1. Take 2 tbsp sweet potato flour

  5. Get 6-7 pcs Straw mushroom
  6. Take 4 eggs
  7. Take 1/2 bowl chop cilantro
  8. Prepare 1 tsp each of sesame oil, light sauce and cooking wine

Frying the Omelette & Batter (For CRISPY ONLY Orh Jian). When the oil is hot, add in the flour batter. "O Ah Jian" (Taiwanese Oyster Omelet). Make the oyster omelet: In a small bowl, whisk the eggs and season with salt and pepper. In a small bowl, stir together the cold water and sweet potato starch.

Steps to make Vegetarian Oh jian (oyster omelette):
  1. Cut straw mushroom to 3~4 slices each
  2. Beat 3 eggs with very little salt and pepper, another bowl, mix sweet potato flour, rice flour and water with pinch of salt, pepper and veggie seasoning
  3. Heat up wok, with low heat, pour in the batter, cook until looks transparent
  4. Pour in the eggs over the semi cook batter, let eggs set for about 30seconds, Stir fry gently until eggs slightly brown
  5. Put in straw mushroom and cilantro
  6. Mix 1tsp each of sesame oil, light sauce and cooking wine
  7. Using the brush, sprinkle the sauce onto the omelette, gently Stir fry to mix well

Make the oyster omelet: In a small bowl, whisk the eggs and season with salt and pepper. In a small bowl, stir together the cold water and sweet potato starch. Oyster omelet originated in the city of Chaozhou (Teochew) and the region of Fujian in China. It is a signature dish of the Hokkien people - Chinese diaspora in Taiwan, Malaysia, Singapore, Indonesia, and the Philippines. The dish consists of small oysters added to a mixture of potato starch and egg.
