Hey everyone, it is John, welcome to my recipe site. Today, I’m gonna show you how to make a special dish, crispy croissants. It is one of my favorites. For mine, I will make it a bit tasty. This will be really delicious.

The ingredients needed to make Crispy Croissants:
  1. Prepare Bread dough:
  2. Get 100 grams Bread (strong) flour
  3. Get 50 grams Cake flour
  4. Make ready 15 grams Sugar
  5. Get 2 grams Salt
  6. Make ready 15 grams Unsalted butter
  7. Take 1/2 Egg
  8. Prepare 1 make 100 ml with the egg Milk
  9. Make ready 3 grams Dry yeast
  10. Prepare Butter layer:
  11. Get 75 grams Unsalted butter
  12. Prepare For glazing:
  13. Make ready 1 - Beaten egg

The dough needs to be mixed properly, rested properly, rolled out properly. The butter needs to be the right consistency—as the dough. The butter needs to be folded in properly, the "package" needs to be rolled out carefully, DNA fold or "tour" given. Croissants are meant to be eaten the first day baked.but haven't we all wanted to enjoy them the second day ; ). you can slice it in half lengthwise and fill it with an almond paste/cream give them a light glaze and top with some slivered almonds, bake them shortly and top with some powered surgar they are wonderful one of my favorites.

Instructions to make Crispy Croissants:
  1. Put the butter into a plastic bag and roll into 10 x 18 cm rectangular shape for the butter layer. Let it chill in the fridge.
  2. Put all the ingredients except for the dry yeast into a bread maker. Put the yeast into the yeast compartment. Start the "bread dough course".
  3. After the 1st proofing is finished, reshape into a ball and place in a bowl. Cover with plastic wrap, and let it chill in the fridge for 30 minutes.
  4. Roll out the chilled dough into a 20 x 20 cm square. Place the butter layer in the middle of the dough.
  5. Fold both flaps of the dough to meet in the centre, and press the edges together to completely seal. Make sure you seal the top and bottom edges as well.
  6. Turn it 90 degrees, and gently roll it out into a 20 x 40 cm rectangular shape with a rolling pin.
  7. Fold in three, and cover with plastic warp. Let it chill in the fridge for 15 minutes.
  8. Repeat Step 6 & 7 two more times (3 times in total).
  9. Roll out the dough into a 20 x 50 cm rectangular sheet. Cut 10 triangles with 9 cm bases.
  10. Make small cuts in the middle of the triangle bases of the dough, and start rolling up. The croissants will be easier to roll up if you move your hands in a spreading motion while lightly touching the surface of the dough.
  11. Arrange on a baking sheet, spray with some mist, and loosely cover with plastic wrap. Then wait for the 2nd proofing. Let the dough rise for 40-60 minutes in a warm place.
  12. When they rise to double their original size, brush their surfaces with the beaten egg. Bake in the preheated oven for 15 minutes at 200°C.
