  20. Take 1 each carrots – 1" fine julienne
  21. Get 8 ounces napa cabbage – fine chiffionade
  22. Make ready 2 tablespoons basil – chiffonade
  23. Make ready 2 tablespoons mint – chiffonade
  24. Make ready 2 tablespoons cilantro – lightly chopped
  25. Get 1/2 package rice noodles (fried @400)
  26. Make ready 2 each limes zest with a micro-plane or finely chopped zest

  1. Whisk together first 8 ingredients in a bowl. Taste and adjust for acidity, sweetness and heat. Set aside
  2. In a non stick saute pan, heat oil and saute onion, lemon grass, ginger and garlic until evenly colored to a light golden brown.
  3. Stir in shrimp mixture cook through out adding 1/4 cup of the sauce and coking for 1 minute then remove from that heat.
  4. Combine peppers, carrots, herbs,nappa cabbage and fried noodles in salad bowl
  5. Toss in warm shrimp with lime zest and extra sauce as needed.
  6. Toss to mix thoroughly and quickly and serve
  7. Note…..If you like more spice add to your hearts content.
