  1. Slice onions and place in the bottom of an ovenproof dish. Lay the fish fillets in top of the onions.
  2. Mix all the sauce ingredients together- add the oil last.
  3. Pour over the fish and onions - make sure the fish is coated. Cover with baking foil and cook for 25 minutes.
  4. Remove from oven and take off the foil. If the sauce is to liquid, carefully drain into a saucepan and then re-cover the fish to keep warm.
  5. Boil the sauce rapidly for a few minutes and then remove from the heat and add the butter. Use a fork to stirthr butter into the sauce.
  6. Pour over the fish and serve
